Another year has come and gone and we are back to the holidays. I can tell because it's cold here in Ohio, and snow has been falling for days! Often we don't see snow until Christmas. you'll never again need to chew your lip as you warily eye the daisy-chained snake pit of power strips your relative or business partner calls a workplace. • 1 tablespoon sunflower oil
• 1 teaspoon sesame oil
• 1 inch piece fresh root ginger, peeled & chopped
• 1 bunch spring onions (scallions), sliced
• 1 red bell pepper, seeded & finely chopped
• 4 ounces small "queen" scallops
• 8 large, raw prawns, peeled
• 4 ounces squid rings
• 1 tablespoon lime juice
• 1 tablespoon light soy sauce
• 4 tablespoon coconut milk
• Salt and ground black pepper
• Mixed salad leaves and crusty bread, to serve

Preparation:

1. Heat the sunflower and sesame oils in a wok or large frying pan and cook the chopped ginger and sliced spring onions for 2-3 minutes, stirring frequently, until golden brown. Add the chopped red pepper and cook, stirring constantly, for a further 3 minutes.
   
2. Add the scallops, prawns and squid rings to the wok or frying pan and cook over a medium heat for about 3 minutes, stirring occasionally with a wooden spoon, until all the seafood is opaque and just cooked through. Add the lime juice and light soy sauce.
   
3. Pour in the coconut milk and mix well, then simmer the sauce, uncovered, for 2 minutes until the sauce begins to thicken slightly.
   
4. Season the stir-fry well. Arrange the mixed salad leaves on two individual serving plates and spoon over the seafood mixture with the juices. Serve the seafood with plenty of crusty bread to mop up the juices.
